STAUNING DISTILLERY, Stauning
Founded in 2006, the First Danish purpose - built malt whisky distillery entered a more adolescent phase in 2009, after having experimented with two small pilot stills bought from Spain, two nre Portuguese - made stills of 1000 and 600 litres respectively were installed and the distillery is now abled to produce 6000 litres of alcohol a year.
In 2012 more stills were installed and Stauning distillery has now two wash stills and two spirit stillswith a production of 15000 litres od alcohol a year.
The aim is always been to be self - sustaining and so Danish barley is bought and turmed into malt on an own malting floor. The germinating barley usually " to be turned 6 - 8 times a day, but the Stauning people have constructed an automatic "grain turner" to do the job.
Two core expressions were decided on - Peated Reserve and Traditional Reserve, and the Peat for the Peated Reserve is acquired from one of the few remaining peat bogs in Denmark.
June 2012 the first edition of the two versions were released with slightly more than 700 bottles of each.
2013 a Young Rye whisky is released and two limited editions both peated but with a different finish: Oloroso and Pedro Ximenez
Announced is a Traditional Reserve which is finished in an own Rye cask.
